In Malaysia, stir-fried instant noodles are basically a household staple – everyone eats them, it’s just part of daily life. Since August is Merdeka month, I thought I’d share one of my family’s go-to comfort foods: Mamee Goreng.

Fun fact, Mamee is actually a local brand from Malacca! I first bought it after seeing people online rave about how good it is. Honestly, I wasn’t expecting much, but after trying it once – that was it. I’ve never looked at another instant noodle brand again.
Do you know that feeling, when a simple meal makes your heart skip a beat? With work and school keeping us on our toes, who has time to fuss over complicated dishes? Sometimes, all you need is something quick to whip up, packed with flavor, and instantly uplifting. That’s exactly what Mamee Goreng is – it just gets us busy folks.
The noodles are amazing – springy, bouncy, with a great chew. Each strand is coated in rich sauce, giving you that perfect mix of savory, a little sweet, and just the right amount of heat. Every bite bursts with flavor! I always add tofu, potato cubes, and a fried egg. The best part? Breaking that runny yolk and mixing it all in with the noodles – pure happiness in every mouthful!

- 1 Potato
- 0.5 Piece Firm Tofu
- A handful of Bean Sprouts
- 2 Eggs
- 2 piece Mamee Instant Noodles
- 1 Onion
- 2 Calamansi Limes
- Cooking Oil
SEASONING
- 0.5 tsp Oyster Sauce
- 1 tbsp ABC Sweet Soy Sauce
- 1 tbsp Fish Sauce
- 1 tsp Sugar
- 1 tbsp Chili Paste
- 1 tbsp Tomato Ketchup
- 100 ml Water
GARNISH
- Chopped Spring Onions
- Crispy Fried Shallots
INSTRUCTIONS
- Slice the onion, dice the potato and tofu.

- Heat some oil in a pan, fry the potato and tofu until lightly browned, then set aside.

- Add onion and sauté until fragrant and soft.

- Stir in chili paste.

- Once aromatic, pour in the water.

- Add all the seasonings.

- Return the potato and tofu to the pan.

- Boil the noodles until just softened, then drain (adjust doneness to your liking).

- Toss the noodles into the pan and stir-fry until well coated.

- Finally, add bean sprouts and stir-fry briefly. Serve hot with a fried egg, spring onions, and crispy shallots – time to dig in!
