Why We Need More Park Picnics and “Doing Nothing”
We really do love picnics.
Maybe it’s not really about what we eat, but the little journey of stepping outside. Feeling the breeze, enjoying the sunshine and the shadows of the trees, finding a nice spot to sit down, and slowly enjoying a meal together.
After we’re full, we make ourselves a cup of coffee, sit back, enjoy the view, and simply do nothing for a while.
No rush.

The Secret to Perfect Tomato Egg Stir Fry
Tomato and scrambled eggs may be an easy, everyday dish, but there are still a few little culinary tricks that make it taste even better.
1. The Fluffiest Scrambled Eggs
- Beat and Season: Beat your eggs and season them with a pinch of salt and black pepper.
- Hot Pan, Cool Oil: Heat your pan well before adding the oil, then pour in the eggs.
- Patience is Key: Don’t keep stirring them right away! Let them set slightly before gently pushing them around. This keeps the eggs softer and more tender.
- Alternative Preference: If you prefer your eggs a little firmer, simply cook them a little longer. They’ll develop a deeper, more fragrant eggy flavor too.

2. Rich, Flavorful Tomatoes
- Choosing the Best Tomatoes: I prefer ones that are ripe and deep red, as they’re naturally sweeter and more flavorful.
- To Peel or Not to Peel: If you don’t mind eating the tomato skin, simply cut them into pieces and cook them as they are. For a smoother texture, lightly score a cross on the tomatoes, blanch them briefly in boiling water, and peel off the skin.
- The Flavor Boost: Cut the tomatoes into chunks, add a little salt and sugar, and cook until they release their natural juices. Then, season with a touch of oyster sauce and tomato ketchup before adding the eggs back in. Gently toss everything together and that’s it!

3. Make It Your Own
- Love Extra Sauce? Just add a splash of water while cooking.
- Prefer Tangy & Sweet? Adjust the sugar to match your personal palate.
- No Strict Rules: There’s no need to stress over exact measurements. Adjust the ingredients to whatever you have in your fridge.

INGREDIENTS
- 2 Tomatoes
- 3 Eggs
- 3 tbsp Cooking Oil
Egg mixture seasoning
- A pinch of Salt
- A pinch of Pepper
Seasoning
- A pinch of salt
- 1 tsp Sugar
- 1 tbsp Oyster Sauce
- 0.5 tbsp Soy Sauce
INSTRUCTIONS
- Score an X on the bottom of each tomato and blanch in boiling water for about 5 minutes, or until the skin peels off easily.

- Chop the peeled tomatoes into small pieces and set aside.

- Crack the eggs into a bowl, add a pinch of salt and pepper, and whisk well.

- Heat oil in a pan. Once hot, pour in the egg mixture. Stir briefly, and remove from the pan as soon as the eggs are just set to prevent them from overcooking.

- Leave some oil in the pan, add the tomatoes, salt, and sugar, and stir-fry until the tomatoes release their juices and become mushy.

- Add the scrambled eggs, ketchup, oyster sauce, and soy sauce, stir-fry evenly, and it’s ready to serve.
