Tips for Choosing Zucchini, Tofu, and Mussels
Zucchini is one of the star ingredients of this soup. Pan-searing it first intensifies its natural aroma and sweetness, adding a subtle, natural sweetness to the broth. If you don’t have zucchini on hand, feel free to substitute it with other gourds or squashes you like, such as cucumber, luffa (ridged loofah), or chayote, each bringing a unique twist to the broth.
For the tofu, firm tofu is strongly recommended. Because it has a lower water content, firm tofu absorbs the broth much more easily during cooking. It also has a denser texture, meaning it won’t easily break apart during longer simmering times. As for the mussel meat, it is best added near the end. Mussels cook very quickly; overcooking will make the meat tough and rubbery.
Why Add the Tofu Early?
Once the soup base is seasoned, you can add the fish cakes and firm tofu. We add the tofu at this stage rather than waiting until the very end, so that it has time to slowly absorb all the flavors of the broth. Bring it to a boil over high heat, then reduce the heat to low and simmer for about 10 minutes. Try not to stir the tofu constantly while it simmers to prevent it from breaking, while allowing it to soak up the soup. By the end, the tofu will be packed with umami flavor, making every bite deeply satisfying.

Pair with Soba Noodles for an Extra Treat
While the soup is simmering, you can prepare a portion of soba noodles. Once cooked, rinse the noodles immediately in cold water to wash away the surface starch; this keeps the noodles springy and prevents them from sticking together. Drain well and set aside in a bowl. If you like a little kick, you can also serve it with some wasabi—seafood paired with a touch of wasabi makes the flavors pop even more!

Add the Mussels at the Very End—Just One Minute
First, clean the mussel meat thoroughly. Once the soup base is fragrant and simmering, drop the mussel meat in. Let the soup return to a boil, cook for about one minute, and turn off the heat. Mussels cooked just right are smooth, tender, and naturally sweet. Cooking them for too long will make the meat tough and ruin that delicate tenderness.
How Does Mussel and Zucchini Tofu Soup Taste?
This soup has a wonderfully light, sweet, and savory flavor profile. The zucchini brings a subtle vegetable sweetness, while the dried shrimp and mussels amplify the deep seafood umami. Enhanced with fish sauce, soy sauce, and soup stock powder, the broth gains rich layers of flavor.
My personal favorite way to eat this is to submerge the soba noodles in the soup just long enough to soak up a bit of the broth before eating. This way, the noodles don’t get soggy from soaking too long; they stay delightfully chewy while clinging to all that savory goodness. Pair that with a piece of firm tofu saturated in soup and a tender, freshly cooked mussel, and every single bite is pure comfort.

Cook a Pot of Hot Soup When the Weather Turns Cool

It requires no complex cooking techniques, just zucchini, dried shrimp, fish cakes, firm tofu, and fresh mussels to whip up a pot of sweet and savory seafood tofu soup. It is also very flexible, allowing you to adapt based on what you have in your fridge. You can swap the zucchini for luffa, cucumber, or chayote, or toss in other shellfish if you love seafood.
