The Combination Of Ingredients

It is simple and can be matched freely. Today I will use the flowers and plants grown at my garden to make the combination! The Ulam Raja flowers and young leaves have a light mango fragrance, which is super special! Although butterfly pea flowers have no taste, they are full of anthocyanins and have antioxidant effects. Add some chili padi to enhance the flavor and Kaffir lime leaves to make the whole dish more refreshing.

The basic ingredients are even more casual! Carrots, cucumbers, jicama… These refreshing ingredients are the basic for Lo Sang. However, there are some places to pay attention to! Ginger flowers have a lot of fiber, so they need to be chopped up, otherwise they will get stuck in your teeth when you eat them; and the calyx of butterfly pea flowers is slightly poisonous, so you must remove it if you eat it raw. Cut the mandarin orange in half, and it will look super tempting when you put it on the plate; cut the shallot into strips and soak it in ice water for 10 minutes, it will become crispy and can also remove the spiciness. In addition to vegetables and fruits, you also need to add some protein-eggs and shrimp. Otherwise, it will taste too plain. Cutting it into strips will make it taste harmonious and look beautiful!

The Soul Sauce Of Lou Sang

Don’t pour out the water used to boil shrimps. Add some palm sugar, sesame oil and plum sauce. The sauce is fragrant and fresh, and it can also neutralize the coolness of the salad. Some people use maltose or honey as sweetness, but I choose to add palm sugar. The unique coconut flavor can also add a Nanyang flavor.

Crispy Crackers

In addition to vegetables, fruits and seafood, some nuts and crispy crackers will add into to Lou Sang. We added nutmeg slices, which are special products of Penang. And squid crispy crackers, to make this dish rich in an instant. You can also replace the crispy crackers with your favorite snacks according to your personal preferences!

INGREDIENTS

  • 15 g Ginger Flower
  • 30 g Carrot
  • 50 g Cucumber
  • 8 Shrimp
  • 15 g Squid Crackers
  • 8 pcs Butterfly Pea Flowers
  • 1 Egg fried egg
  • 1 Chili Padi
  • 15 g Nutmeg Slices
  • 1 Shallot
  • 1 Calamansi
  • 1 Kaffir Lime Leaf young leaf
  • 8 Ulam Raja Young Leaves
  • 8 Ulam Raja Flowers
  • 2 Mandarin Oranges

Sauce

  • 30 g Plum Sauce
  • 15 g Palm Sugar
  • 1 tsp Sesame Oil
  • 50 g Boil Shrimp Water


INSTRUCTIONS

  • Peel and shred carrots, shred Kaffir lime leaves and cucumbers, chop ginger flowers, cut chili padi into small sections, break the Ulam Raja young leaves into small leaves, and cut mandarin orange flesh into half for later use.
  • Peel and shred shallots, soak in ice water for about 10 minutes, then drain and set aside.
  • Beat eggs, pour into a non-stick pan and fry, then shred.
  • Put shrimps in the pot, add about 50 grams of water and cook.
  • Take out the shrimps and let them cool, then cut them in half.
  • Pour plum sauce, sesame oil, and palm sugar in the water used to boil shrimps on low heat until the palm sugar melts.
  • Arrange all the prepared ingredients on a plate and enjoy!
