Chinese Doughnut is a simple and “all-match” Chinese traditional food. In Malaysia, we call it Yu Char Kway or Youtiao. Generally, it is served with porridge or Bak Kut Teh. We like to eat Yu Char Kway with Hainanese coffee, bite Yu Char Kway and drink coffee. Such a simple and delicious breakfast or afternoon tea. what do you like to eat with Chinese Doughnut?

The ingredients for Chinese Doughnuts are quite simple, but it takes a longer time to rest the dough. It’s need about 24 hours. Maybe some people will say, why spend so much time and energy to make Youtiao? It only sells RM 1 outside. In fact, you can heal yourself by cooking. Because cooking needs to be done physically and time is one of the important things in the progress. So we must be patient. Learning traditional foods makes us experience a lot, we will cherish how the chefs work hard to make those traditional foods, and not just see the price of the foods.

Frying Youtiao need a lot of cooking oils, but it can be reused for cooking after filtered. And the oil temperature must just right. It easy to get burnt If the oil temperature is too high, and will be oily after fried if the oil temperature is too low. But you can put a small piece of dough to try the oil temperature first. If the dough floats after putting it down for a while, then the oil temperature is just right. And when you putting the Youtiao to fry, please handle carefully to avoid oil splashing and hurt your hands.

Keep it in freezer

The Youtiao can be shaped and frozen. The is convenience for a modern life. Just take it out, defrost then fry it, when you want to eat. In this way, you can save the long resting time and shaping steps. But the dough need to warm up about 30 minutes before fry.

INGREDIENTS

  • 125 g All Purpose Flour
  • 75 ml Water
  • 0.25 tsp Salt
  • 0.25 tsp Baking Powder
  • 0.25 tsp Baking Soda
  • 1 tsp Cooking Oil
  • Right amount of cooking oil for deep fried


INSTRUCTIONS

  • Put all purpose flour, salt, baking soda, baking powder and water stir well.
  • Stir well until smooth then add in oil and stir until the oil absorbed.
  • Ready a container put in the dough and swipe some oil on it evenly.
  • Put into the fridge for overnight to let the dough tender.
  • Defrosted the dough on the next day about 30min to 1 hour and don’t need to knead it. Just do the shaping.
  • Cut the dough into rectangle, put some water on the surface and place the other one on top of it.
  • Use chopstick press on the center of the dough to make it stick together.
  • After heat the oil, pull the dough gently to extend the length, then put it into the wok.
  • After the Youtiao floating on oil then use a chopstick to turn it.
  • Put the fried Youtiao on a colander to strain the extra oil then enjoy it.

💡Tips:
  • After shaping the Youtiao keep it in a container and store in freezer. When you want to eat, defrost it about half to 1 hour. Then heat the oil and fry the dough.
